2 large sweet potatoes, peeled and cut into coins
2 red bell peppers, sliced into strips
1 large red onion, thinly sliced
1 lb ground beef (or turkey or vegan beef crumbles)
1 can of kidney or black beans
1-2 tablespoons of taco seasoning (eyeballed)
1 cup of shredded cheddar (or as much as your heart desires)
Toppings: avocado/guacamole, sour cream, cilantro, hot sauce, etc.
Preheat oven to 400 degrees.
Toss sweet potato coins in olive oil, salt and pepper, and place on one sheet pan. Toss the peppers and red onion with s&p, taco seasoning (1/2 to 1 tablespoon, or until your heart says it's right) and place on another pan. Roast both in the oven for 25-30 mins--can turn/toss halfway through roasting.
Meanwhile, brown the ground beef in a pan on the stovetop with s&p, more taco seasoning (1/2 to 1 tablespoon, you know the deal). When beef is close to being done, add the can of beans. Taste and add more seasoning as desired.
When the oven veggies are ready, pile the peppers, onions, and beef on top of the sweet potatoes. Top with shredded cheese and roast until cheese is melted.
Garnish your "nachos" with the toppings of your dreams and enjoy!
