1 pound feta cheese, broken into chunks
4 garlic cloves, minced
2 tsp. paprika
2 tsp. Turkish red pepper or hot Spanish pimenton
2 tsp. dried mint
3 Tbsp. high-quality olive, plus additional to garnish


Soak the feta cheese in warm water for about 30 minutes, changing the water often to reduce the saltiness. Do not skip this step, as otherwise the dip will be too salty.

Drain the cheese well and crumble it.

Place the feta, garlic, paprika, red pepper, mint, and olive oil in a food processor and process until the mixture is smooth.

Transfer to a shallow bowl, cover and refrigerate for at least 20 minutes or overnight to allow the flavors to blend.

Serve it at room temperature with pita chips or bread. Drizzle olive oil over the top and sprinkle with additional mint (optional).
